So let's kick start with this super easy mutton masala recipe!!
Prep time: 30 Mins
Cooking time: 1 hour
Ingredients:
To Pressure Cook:
Mutton [washed & Cleaned] - 1/2 kg
Ginger garlic paste - 1 tbsp
Turmeric powder - 1 tsp
Coriander/ Dhaniya powder - 1 1/2 tbsp
Green Chillies - 2 [Slit]
Curry leaves - 3 springs
Salt - as needed
Oil - tbsp
Water - 1 1/2 cup
For Sauteing:
Small Onions - 1 cup [Finely chopped]
Garam masala - 1 or 2 tsp
Red chilli powder - 1/2 - 1 tbsp
Saunf/sombu powder - 1/2 tbsp
Curry Leaves - 1 Spring
Coconut oil [Preferable] - 3 tbsp
Method:
- In a pressure cooker add the washed and cleaned mutton while cleaning the mutton remove the excess fat around the meat and chop them into cubes, add ginger garlic paste, a tsp of turmeric (*DO NOT add too much turmeric powder while cooking mutton it will give an iron taste to the meat*) Dhaniya powder, Green Chillies, Curry leaves, Salt, water & Oil.
- Close the lid put on the whistle and cook on high flame until 10 whistles and then slow down the flame to medium low and cook for another 6 whistles. All together will take about 20-30 mins to cook till tender.
- Now switch off the flame and let the cooker rest aside, do not release the pressure, let it get settled on its own.
-Now in a pan, heat the coconut oil, Add curry leaves, shallots and sauté well until translucent, then add in the masala's mentioned under "For Sautéing" stir for 2 mins
- Now open the pressure cooker and add in the cooked mutton to this mixture, pour in all the cooked juices as well and combine everything together.
- keep stirring and Cook on high flame until all the water is evaporated and it becomes thick masala. Once done Switch off the flame and serve it hot!
This makes an excelllllllllllllllllllent combo with Biriyani, Roti, Rasam or even curd rice! :)

Notes:
- Those who don't a have a pressure cooker at home, you can cook it in a heavy bottom kadai, but allow it to cook for a minimum of 1 1/2 - 2 hours to get soft & tender cooked mutton!
- Instead of red chilli powder you can also replace it with mutton masala powder i use the brand Aachi which is less pungent.
