I love corn! so does my family :) So i was too bored wen hubby and my Lo' was taking their sunday afternoon nap, swtiching channels and my idle mind wanted to do something intresting walked straight to the fridge and saw a pack of frozen corn kernels! :) something spicy.. something spicy said the brain! ha! so i just added few spices and made this crunchy snack! Perfect for your movie night or to treat ur friends who give you a surprise visit! :)
Preparation: 10 minutes
Cooking Time: 15 – 20 minutes
Ingredients:
Frozen corn kernels - 1 Cup
Corn Flour - 2 tbsp
Maida - 2 tbsp
Black Pepper Powder - 1 tsp
Salt - 1 tsp
Oil for Deep Frying
To Temper:
Curry leaves - 2-3 springs
Green Chilies - 2 chopped
Garlic Cloves - 2 chopped
Soya Sauce - 1/2 tbsp
Oil - 1 tbsp
Method:
- In a bowl take de-freezed and washed corn, add maida, corn flour, pepper and salt, mix well, the moisture in the washed corn is enough to coat, if u feel it is not enough can can sprinkle few drops of water to bind.
- Heat oil to deep fry them in batches. each batch takes about 4-5 mins, but be careful while frying as the some corn might pop.
- once fried drain them in tissue and keep it aside
- Now heat a pan add little oil [as already we have deep fried the corn add less oil], u can also use the same oil that you used to fry corn.
- add curry leaves, garlic & green chillies one by one and sautee, now add soya sauce and mix, turn the flame on high, add in the fried corn and toss it well for 2 mins and switch off the flame and serve it hot! :)
