I always feel sooo bad when i see the over riped banana's on my kitchen counter.. Suddenly the idea of banana appam striked me.. mom used to make this as a after school snack for me! n it tastes yum when served warm!!
Cooking Time: 10 mins
Ingredients:
Ripe Banana's - 3 Medium
Sugar - 1/4 cup
Egg - 1
Maida/ All purpose Flour - 2 cups
Baking Powder - 1 tbsp
Rice flour - 2 tbsp
Milk - 1/4 cup
Vanilla essence - 1/2 tsp [optional]
Cinnamon Powder - 1/2 tsp
Method:
- In a bowl, place the banana's and mash it with fork and keep it aside
- add flour, salt & baking powder in a bowl and mix everything together and keep it ready to mix it into the batter.
- In another bowl add sugar, egg, Vanilla essence & cinnamon powder beat well until nice and frothy, i used electric hand beater.
- Now add the mashed banana mixture mix & combine well using a spatula.
- Add the flour with salt & baking powder to the banana mixture and whisk gently.
- Now add in the milk little by little to the mixture until the consistency is good enough to scoop into balls using a spoon. Don't make the batter too runny.
- Heat the panniyaram pan, grease it with some ghee and pick some batter and gently spoon it into the pan and cook on medium heat, when one side is cooked, turn the appam and let it cook completly.
- Once done, Serve it immediatly, because it tastes best when it's nice & warm!

Note:
If you do not have an panniyaram pan [appe pan], you can use deep fry the batter in a kadai with oil on low heat, or you also can add some ghee fryin pan and shallow fry them into small rounds. :)
If you are going to deep fry it them keep the size of the balls small, as then can cook fast and evenly.
