Ingredients:
For Dough:
Whole wheat flour (atta) - 2 cups
Oil - 2 tablespoons
Salt - to taste
Water – to knead soft dough
For stuffing:
Potatoes - 2 cups boiled, mashed [i used about 4 medium sized ones to boil]
Garam masala - 1/2 teaspoon
Amchur powder (dried mango powder) - 1 teaspoon
Red chili powder - 1 teaspoon
Cumin powder - 1 teaspoon
Chat masala – 1/2 teaspoon
Green chilies - 2, chopped finely
Coriander leaves - few, chopped finely
Salt - to taste
Butter or ghee - to grease paratha while cooking
- Boil the peeled potatoes in the pressure cooker till it is soft. Remove and let it cool to mash.
- Meanwhile its cooling down knead the dough. Take a bowl add atta, salt & some oil and mix well, knead into a soft ball by adding water little by little. It’s very important that the dough is soft and smooth, this helps is flattening the dough easily after stuffing. Cover & Keep it aside.
- Now in a bowl take the boiled potatoes and mash it without any lumps using a big spoon and add all the ingredients mentioned under “for stuffing” and mix well.
- Now take the paratha dough, knead and make 8 equal sized ball and sprinkle some flour on top of it.
- Take one ball and flatten & roll it out into a medium sized circle & place some stuffing in the center and gather all the edges of the dough and seal it into the center.
- Now again gently flatten it using the rolling pin, dust the kitchen counter with flour to roll out smoothly.
- Heat tawa, and place the paratha and cook on medium flame. Apply some butter or ghee on both sides while cooking.
- Once done transfer it to a plate and serve hot with yogurt!
